Anche se utilizziamo un’ottima miscela dobbiamo imparare a usare bene gli strumenti che abbiamo a disposizione. Spesso si impara molto dagli errori. In questo video vediamo due tipici caffè sbagliati: l’espresso sottoestratto e l’espresso sovraestratto. * CAFFE’ ESPRESSO SOTTOESTRATTO Il caffè espresso sottoestratto si presenta vuoto, con una crema evanescente, dovuta spesso a una dose scarsa di polvere di caffè ea una macinatura troppo grande. * CAFFE’ ESPRESSO SOVRAESTRATTO Il caffè espresso sovraestratto si presenta con una crema scura, con la tipica macchiolina bianca chiamata “bottone”. In questo caso l’errore è dovuto a una dose di polvere di caffè eccessiva, a una macinatura troppo fine oppure alla temperatura troppo elevata della macchina, che tecnicamente brucia il caffè. * CAFFE’ ESPRESSO PERFETTO Un ottimo caffè espresso si presenta invece con una bella tigratura, con una crema color nocciola, compatta e persistente, che non si apre neanche ruotando la tazzina. www.jollycaffe.it
